Baked Tilapia with Coconut Milk and Lemon 

Ingredients:
  • 2 lbs of tilapia (you can also use swai, catfish, almost any white fish)
  • 1 can coconut milk
  • 1/3 cup sweet chili sauce (available in Asian foods section)
  • 1 lemon
  • 1/2 bunch cilantro, chopped
  • salt and pepper

Procedure:

1. Season tilapia with salt and pepper and set aside. 

2. In a bowl combine coconut milk, chili sauce, salt, pepper and chopped cilantro. Can substitute chives for cilantro and add sliced tomatoes and celery. 

3. Mix well. Pour 1/4 of the mixture on the bottom of a baking pan and spread.

4. Place a layer of tilapia on the bottom of the pan, followed by a layer of lemon slices and 1/4 of the coconut milk mixture. Repeat in the same order with the remaining ingredients.

5. Bake at 350 degrees for 35-45 minutes.
